Manisulu arrived in London from war-torn Uganda in 1990. “I just came over here on holiday! And stayed by default.”

He started working in Mayfair’s The Guinea Grill in 1995 and can still be found either in the kitchen or outside guarding the pub’s door. I ask if the place has changed much over the years. “Absolutely. We used to be busy but now it’s madness!”

He’s instantly recognisable by the immaculately-kept bespoke green uniform he wears when on the door.

The pub in its current guise opened in 1952 but there has been an inn of sorts on the site since 1423. Now headed up by Oisín Rogers, the restaurant specialises in dry-aged, grass-fed beef steaks cooked on an open grill to feed the hungry Mayfair masses.
